A Revolution in the Production of Yogurt

Traditional production methods for stirred style yogurt involves breaking the curd following incubation with agitation and passing the mass through a “smoothing” sieve or valve to eliminate protein grits and to improve the final product texture. Post incubation agitation and “smoothing” of the curd are process steps that can now be eliminated by the application of the Quadro Ytron™ Z Emulsifier.

Following incubation, the set curd is pumped (without agitation) through a heat exchanger and a Z Emulsifier prior to packaging and cold storage. The Z Emulsifier subjects the curd to an extremely short, controlled shearing of the yogurt mass. Not only are the grits broken down or reduced, but the controlled shearing action results in an improved overall water binding ability of the yogurt.

 

 

Quadro's Approach

The Quadro Ytron™ XC Powder Disperser has a dual-stage reactor housing designed specifically to incorporate and disperse large quantities of powders (up to 40% by weight) into a liquid stream. The first stage in the reactor creates a strong vacuum ensuring the powders are drawn into the reactor head.

Immediately after the powder comes into contact with the liquid, the pre-mix is subjected to directional and velocity changes as the mix repeatedly impinges on stationary baffles. The second stage tangentially discharges a smooth, lump-free, homogeneous product.
